Vegan French toast!

This featured breakfast is easily made using simple ingredients that only takes a few minutes to prepare!

Ingredients:

  • Non-dairy milk beverage of choice (I chose oat milk, my go-to dairy substitute!)
  • Cooking spray or oil
  • Vegan brioche bread
  • Just Egg liquid egg substitute

First off, depending on what type of cookware you are using will determine how much cooking spray or oil you’ll need. I cook everything with stainless steel so I have to use plenty of cooking spray to keep the bread from sticking in the pan.

If you’ve ever cooked with Just Egg before, you may have experienced that it tends to stick very easily in the skillet. As I’ve never used nonstick cookware with Just Egg, I can’t say that this is a universal truth, but just keep in mind that this might happen to you. The key is lots of spray or oil, and frequent movement.

For this recipe, I use vegan brioche bread, which is a buttery sweet bread that you can find at Sprouts and Trader Joe’s. However, if you can’t find that any regular bread will do. In my opinion, the sweet flavor of the vegan brioche bread really makes the French toast delicious even without syrup.


Instructions:

  1. Begin by mixing 1/2 part milk substitute with 1/2 part Just Egg in a mixing bowl. Depending on the amount of toast you are making will determine how much mixture to make. For reference, 1/3 cup of milk substitute and 1/3 cup of Just Egg will make approximately six pieces of French toast.
  2. Generously coat your skillet with cooking spray or oil. Heat the skillet on medium-high and begin dipping your sliced bread into the milk and egg substitute mixture. Make sure to coat the bread as evenly as possible on both sides.
  3. Once the skillet is warm and ready, place the bread slice onto the skillet. Every few seconds flip the bread so it doesn’t burn or stick to the skillet.

    Tip: For a firmer French toast, try placing your bread in a toaster prior to dipping it in the mixture.
  4. Continue to heat the toast until both sides are a golden color. Move to plate and repeat for each additional slice.

Enjoy with a fresh glass of your favorite non dairy milk and some agave syrup!
